It’s no secret that I love coffee. From my morning brew to nearly every other coffee-related recipe or project, I’m obsessed. Coffee soaps, coffee cupcakes, coffee decor – there’s something about this delicious beverage (probably caffeine) that I just can’t get enough of.
My latest craving has been for treats that pair well with coffee, and what better baked good does that than biscotti? Originating in Italy, biscotti is a twice-baked “biscuit” that has a great crunch and that I personally think tastes best when dunked in a cup of coffee.
After hunting down a number of biscotti versions (and attempting one not-so-good one), I finally found a great Cappuccino Biscotti recipe from Joy of Baking. These cookies are made with nuts, chocolate chips, spices and most importantly brewed coffee. The coffee I used is from my favorite local roaster, FreshGround Roasting. If you have an espresso machine, I would suggest making this recipe using FreshGround’s Forte Espresso. Otherwise, use triple strength dark roast coffee for the recipe, such as the Ethiopian Yirgacheffe Dark Roast.
Delicious, sweet, crunchy cookies alongside a cup of freshly brewed coffee makes for an incredible cafe-quality treat in your own home. You can also package a few biscotti cookies together for a little gift or make them ahead of time when you’re planning to entertain.
